It is amazing how much water is in vegetables. Especially carrots. I dehydrated eight large carrots and they shrivelled up to about a tenth of their former volume. I wonder if they will soak up just as much water when I rehydrate them, or will I need to drink more water than normal to stay fully hydrated? I have now done onions, carrots, sweet potato and zucchini. Besides drying food, I made good progress with taking an inventory of all my gear, engraving and labelling as I went. Then I took my family out to dinner for a farewell. It was the last time we will all be together for who knows how long. My brother is going to Indonesia in three days, my parents are going to Europe in four days and my sister is on a 4WD trek in northern Australia. Busy people!
